Egg and chickpea sundal recipe

INGREDIENTS:

  1. Soaked and boiled chickpea - 1 cup
  2. Egg - 2
  3. Finely chopped onion - 2
  4. Finely chopped tomato - 2
  5. Chopped and crushed ginger - 1 inch
  6. Chopped and crushed garlic - 3 cloves
  7. Curry leaf - 8
  8. Chili flakes - 1 teaspoon (tsp.)
  9. Unsalted soy sauce - 2 teaspoon (tsp.)
  10. Salt - as needed
  11. Oil - 2 tablespoon (tsp.)

PREPARATION:

  1. Heat oil in a pan. add ginger, garlic, curry leaf and cook until the raw smell is gone.
  2. Now add chopped onion, tomato and cook until they are cooked half.
  3. Now add chili flakes, soy sauce and sauté for 30 seconds.
  4. Now add the egg and salt. Stir and cook until the egg is half cooked.
  5. Now add the cooked chickpea. Cook until the egg becomes hard and well coated the chickpea and serve.

NOTES:

  1. Good for lunch box
