Andhra egg and shrimp curry recipe

INGREDIENTS:

  1. Shrimp - 1/2 kilogram
  2. Boiled egg - 4
  3. Finely Chopped Onion - 4
  4. Slit Green chili - 2
  5. Ginger paste - 1 teaspoon (tsp.)
  6. Garlic paste - 1 teaspoon (tsp.)
  7. Coriander leaf - handful
  8. Chili powder - 2 teaspoon (tsp.)
  9. Turmeric powder - 1/2 teaspoon (tsp.)
  10. -- Grind to paste --
    1. Coriander seed - 2 teaspoon (tsp.)
    2. Cinnamon stick - 1 inch
    3. Clove - 3
    4. Poppy seed - 2 teaspoon (tsp.)
    5. Cardamom - 2
  11. Salt - as needed
  12. Oil - as needed

PREPARATION:

  1. Grind ingredients under the section "-- Grind to paste --" into a thick fine paste by adding little water as possible.
  2. Heat little oil in a pan. Add the shrimp, salt as needed, turmeric powder. Sauté the shrimp until the water is evaporated and keep it aside.
  3. In the same pan add more oil  as needed. Add onion, green chili and sauté until the onion turns translucent (golden brown).
  4. Now add ginger and garlic paste and sauté until the raw smell is gone.
  5. Now add the shrimp and sauté for few minutes.
  6. Now add chili powder, salt as needed, little water. Place the lid and cook until oil starts to separate. NOTE: time to time you have to stir or curry will get burnt.
  7. Now add the ground paste, boiled egg and sauté for 2 to 3 minutes. Garnish with coriander leaves and serve.
