Akatthi flower omelet recipe

INGREDIENTS:

  1. Akatthi flower - 25
  2. Egg - 4
  3. Finely chopped Onion - 1
  4. Finely chopped Green chili - 2
  5. Oil - 2 teaspoon (tsp.)
  6. Mustard seed - 1/4 teaspoon (tsp.)
  7. Black pepper powder - as needed
  8. Salt - as needed

PREPARATION:

  1. Get the akatthi petals from the flower and chop them in to fine pieces.
  2. Break the egg into a bowl.
  3. Heat oil in a pan. Add the flower pieces, onion, green chili and sauté well until they are sautéed well. Now add this to egg and beat well.
  4. Now add the black pepper to the egg and beat well.
  5. Heat a skillet apply oil. pour the egg mixture in.
  6. As the omelette starts to set, lift an edge of the omelette with a spatula and tilt the pan so that the runny, unset portion of the omelette can run underneath and start to set. Repeat on the opposite side
  7. Once done (cooked on bothe sides) serve.
