Spanish rice recipe

INGREDIENTS:

  1. Samba rice or Basmati rice - 500 grams
  2. Chicken - 750 grams
  3. Thinly sliced Onion - 250 grams
  4. Sliced Potato - 250 grams
  5. Tomato - 100 grams
  6. Slit Green chili - 4
  7. Ginger, garlic paste - 2 teaspoon (tsp.)
  8. Turmeric powder - 1/2 teaspoon (tsp.)
  9. Chili powder - 4 teaspoon (tsp.)
  10. Soy sauce - 3 teaspoon (tsp.)
  11. Curry leaf - 8
  12. Salt - as needed
  13. Oil - to fry

PREPARATION:

  1. Add ginger garlic paste, turmeric powder, 2 teaspoon (tsp.) of chili powder, 2 teaspoon (tsp.) of soy sauce, salt. Mix well and marinate for 1 hour.
  2. Remove the skin of the tomato by dropping them for few minutes in boiling water. Chop the tomato.
  3. Cook the chicken 3/4 and filter the broth (liquid). Keep the chicken and broth aside. Remove the bones from the chicken and break them into small pieces.
  4. Fry the potato, onion in oil and keep it aside.
  5. In a rice cooker, pan or pressure cooker add the rice, broth, water as needed, rest of the chili powder, rest of soy sauce, tomato, green chili, curry leaves, salt as needed and cook the rice. NOTE:  water (liquid) to rice should be 2 : 1, in this case you need to measure the broth as well.
  6. In a wide bowl. Add cooked rice, chicken, fried potato onion. Mix well and serve.

NOTES:

  1. Goes well with yogurt pachadi.
