INGREDIENTS:

  1. Chicken pieces - from 1 whole chicken
  2. Coconut - 1
  3. Chopped onion - 2
  4. Turmeric root - 1 inch
  5. Dry chili - 10
  6. Black pepper - 6
  7. Cinnamon stick - 2 inch piece
  8. Cardamom - 4
  9. Ginger - 1 inch piece
  10. Cumin seed - 1 teaspoon (tsp.)
  11. Garlic - 10 cloves
  12. Clove - 4
  13. Tamarind - small lemon size
  14. Vinegar - 1 tablespoon (tbsp.)
  15. Sugar - 1 teaspoon (tsp.)
  16. Oil - 2 tablespoon (tbsp.)
  17. Salt - as needed

PREPARATION:

  1. In a bowl add chicken pieces, 1 teaspoon (tsp.) of salt. Mix well and marinate.
  2. Soak tamarind in 1/2 cup and take the juice.
  3. Grind or shredded the coconut and take thick coconut milk
  4. Grind turmeric root, dry chilies, ginger, garlic, cinnamon stick, cardamom into a fine thick paste by adding little water as possible.
  5. In a pan heat oil. Add onion and sauté until they turn translucent (golden brown).
  6. Now add the chicken pieces and sauté until they are cooked. NOTE: place a lid and cook. Time to time stir to avoid burning. add little water if needed.
  7. Now add coconut milk, vinegar, ground masala paste, sugar, salt. Reduce the heat to simmer and cook until the gravy consistency is reached. Remove from heat and serve.
