Chicken white rice recipe

INGREDIENTS:

  1. Basmati rice - 3 cup
  2. Chicken (small pieces) - 250 grams
  3. Thinly Sliced Onion - 1
  4. Thinly sliced Green chili - 5
  5. Ginger paste - 1 teaspoon (tsp.)
  6. Garlic paste - 1 teaspoon (tsp.)
  7. Coconut milk - 1 1/2 cup
  8. Finely Chopped Mint leaf - 1/4 cup
  9. Finely Chopped Coriander leaf - 1/2 cup
  10. Curry leaf - 5
  11. -- For tempering--
    1. Cinnamon stick - 3 inch (broken)
    2. Cloves - 3
    3. Cardamom - 3
    4. Cumin seed - 1/2 teaspoon (tsp.)
    5. Fennel seed - 1/2 teaspoon (tsp.)
    6. Bay leaf - 2
    7. Oil - 5 teaspoon (tsp.)
  12. Salt - to taste

PREPARATION:

  1. Soak basmati rice for hour in water.
  2. Heat oil, add cinnamon stick, cloves, cardamom, cumin seed, fennel seed, bay leaf and sauté for few minutes.
  3. Now add onion, green chili, curry leaves and cook for 2 minutes.
  4. Now add ginger paste, garlic paste and sauté until raw smell is gone.
  5. Now add chicken, salt to taste, mint leaves, coriander leaves and sauté for 1 minute.
  6. Now add the coconut milk, 3 1/2 cup of water and bring to boil.
  7. Now add the soaked rice (drain excess water from the rice), add salt to taste.
  8. Transfer the rice to  pressure cooker or electrical cooker and cook it then serve. NOTE: you can also simmer and cook the rice as well in the same pan.

NOTES:

  1. Goes well with korma.
