Andhra masala chicken fry recipe

Who will not like chicken fry which is cooked with less oil and spicy. This chicken fry goes well as starter or side dish for biryani.

INGREDIENTS:

  1. Chicken pieces - 1/2 kilogram
  2. Finely chopped onion - 3/4
  3. Slit Green chili - 3 to 4
  4. Turmeric powder - 1 teaspoon (tsp.)
  5. Chili powder - 1 teaspoon (tsp.)
  6. Garam masala powder - 1/2 teaspoon (tsp.)
  7. Black pepper powder - 1 teaspoon (tsp.)
  8. Curry leaf - 10 count
  9. Coriander leaf - little
  10. Oil - 2 tablespoon (tbsp.)
  11. Salt - a needed
  12. ----------------------------------
  13. -- Grind to paste -----------
  14. -----------------------------------
  15. Coriander seed - 1 tablespoon (tbsp.)
  16. Cinnamon stick - 1 piece
  17. Clove - 2
  18. Garlic - 4 to 5 clove
  19. Ginger - a piece (an inch)
  20. Onion - 1/4

PREPARATION:

  1. In bowl add chicken pieces, turmeric powder, chili powder, garam masala powder, salt and mix well until they are well coated. Keep this marinating for minimum 10 minutes.
  2. In mixer first add coriander seeds, cinnamon stick, clove and grind it. Now add to this garlic, ginger, 1/4th of onion and grind to a coarse paste without adding water.
  3. Heat oil in a pan. add chopped onion, green chili and sauté until the onion become translucent. Now add the ground paste and sauté for 1 to 2 minutes or until all the ingredients are well sautéed and the raw smell is gone.
  4. Now add chicken pieces and sauté until they are cooked and all the liquid is gone (oil separates). NOTE: chicken will release water if getting burnt you can add very little water
  5. Now add black pepper powder and cook for another 2 to 3 minutes. Before you remove from heat add the curry leaves, coriander leaves and mix well.

NOTES:

  1. Cooking Time:  20 minutes
  2. Making with green chili and curry leaves is a must for best taste.
  3. Do not add too much onion as it will release more liquid and the fry become soggy (gravy).
