Vermicelli payasam (kheer) recipe

INGREDIENTS:

  1. Vermicelli - 1 cup (broken)
  2. Sugar - 1 1/2 or 1.5 cup
  3. Milk - 4 cups
  4. Cardamom - 4
  5. Cashews - 10
  6. Raisins - 10
  7. Ghee - 4 tablespoon (tbsp)
  8. Saffron - a pinch

PREPARATION:

  1. In a pan melt 2 table spoon of ghee fry cashews, raisins until raisins plump and keep it aside.
  2. In the same pan add 2 table spoon of ghee and melt it. Now add the vermicelli and fry until it turns brown. (or for 2-5 min) and keep it aside.
  3. In a pan add milk and bring it to boil. Now add the vermicelli, fried cashews, raisins, crushed cardamom, saffron.
  4. Simmer and cook until the right thickness is reached. Once the right consistency is reached server hot.
