INGREDIENTS:

  1. Milk - 1/2 liter
  2. Rice - 1/2 cup
  3. Spit green gram - a handful
  4. Jaggery - 1 cup
  5. Sugar - 1 cup
  6. Ghee - 4 teaspoon (tsp.)
  7. Cashew, raisins - as needed
  8. Crushed cardamom - 2

PREPARATION:

  1. Add little water to jaggery and cook until the jaggery melts. Remove this from stove and cool this down to room temperature.
  2. Boil the milk. Add rice, green gram and cook them. Once the rice is cooked add sugar and cook until the sugar is dissolved. Now add crushed cardamom. Now remove the payasam from stove.
  3. In a separated pan melt ghee. Roast the cashew, raisins and them to the payasam.
  4. Once the payasam is little cooled add the jaggery mix well and serve.

NOTES:

  1. Don't add hot jaggery to milk. Milk will form curd.
