Carrot payasam recipe

INGREDIENTS:

  1. Shredded carrot - 2
  2. Milk - 2 cup
  3. Vermicelli - 1 cup
  4. Sugar - 1 cup
  5. Water - 1 cup
  6. Ghee - 3 teaspoon (tsp.)
  7. Cashew, raisins, cardamom - as needed

PREPARATION:

  1. Melt little ghee in a pan and roast the cashew, raisins and keep them aside.
  2. In same pan add more ghee and roast eh vermicelli and keep it aside. Now add the shredded carrot and roast them for up to 8 minutes to remove excess moisture. NOTE: don't roast the dry.
  3. Now to it add water, milk, roasted vermicelli, a  pinch of salt and cook them. Once this mixture is cooked well. Add sugar and crushed cardamom and cook until the right thickness is reached.
  4. Before you remove from heat add the roasted cashew and raisins. then serve.
