Boondi payasam recipe

INGREDIENTS:

  1. -- For Making Boondi --
    1. Gram flour - 1 1/2 cup or as needed
    2. Baking powder - 1/4 teaspoon (tsp.)
    3. Oil - for frying
  2. -- Making payasam --
    1. Boondi - 1 cup
    2. Cashew - little
    3. Cashew - little
    4. Milk - 1/2 liter
    5. Sugar - 1 1/2 cup
    6. Cardamom - 2
    7. Ghee - 2 teaspoon (tsp.)

PREPARATION:

  1. -- Making boondi --
    1. Mix gram flour, baking powder, water and make batter (dosai batter consistency)
    2. Heat oil to 350 degree Fahrenheit.
    3. Hold the boondi ladle (refer to image below) and pour some batter and tap the ladle slightly. Dripping will fall into the oil.
    4. Fry it for a while, no need to get crispy
    5. Drain it in a paper towel to get rid of excess oil.
  2. Heat milk in a pan. Now add sugar and cook until the sugar dissolved.
  3. Now add boondi and cook for 1 minute and remove from heat.
  4. In a pan melt ghee and roast the cashew, raisins until the cashew change color and raisins plump up. Add this to boondi payasam and serve.

NOTES:

  1. Boil the milk to your preferred thickness and add boondi. Boondi should not be spicy and salty.
  2. Boondi ladle : boondi laddle
