Eggless tutti frutti Christmas cake recipe

INGREDIENTS:

  1. Maida flour - 1 + 1/2 cup
  2. Sugar - 1 cup
  3. Oil - 1/2 cup
  4. Vanilla essence - 2 teaspoon (tsp.)
  5. Yogurt or curd - 1 cup
  6. Baking powder - 1 1/4 teaspoon (tsp.)
  7. Baking soda - 1/2 teaspoon (tsp.)
  8. Tutti frutti - 1 cup
  9. Maida flour - 2 tablespoon (tbsp.)

PREPARATION:

  1. Add 2 tablespoon (tbsp.) of maida flour and mix well.
  2. In a bowl add yogurt or curd, baking powder, baking soda and beat well for 1 to 2 minutes with a whisk. Keep this aside for 2 to 3 minutes.
  3. Now add sugar to yogurt or curd and mix well until the sugar dissolves.
  4. Now add oil, vanilla essence and mix well.
  5. Now add Maida flour and mix well until all comes together to a thick batter.
  6. Now add the flour coated tutti frutti and mix well.
  7. In a 8 inch cake pan coat with oil. Now place a parchment paper. Pre heat the oven to 350 degree Fahrenheit. Pour the cake mixture into the cake pan. Tap the bottom of the pan on table top to release excess air.
  8. Now bake this 30 to 35 minutes or until its donethen serve. NOTE: It is easy to check a cake for doneness by using the toothpick test. Just stick a toothpick into the center of your cake or cupcake. If there is wet batter still on the toothpick, it needs more time in the oven. If it comes out clean, your cake is done!

NOTES:

  1. Cooking time: 30 to 40 minutes.
  2. You can also add nuts.
  3. Since no eggs are used the cake will be bit dense.
